After the unexpected success of the "egg mayonnaise" recipe, it continues in the "quick and easy" to cook ! Another grandmother recipe, very accessible and very French : the cheese-potatoe "omelette".

Cook the potatoes in water, then peel and cut the potatoes into slices and fry them in a pan with olive oil.
Mix the eggs in a bowl and add salt and pepper.
Add a few pieces of french Emmental (or Gruyère swiss Cheese ).
